The Health Transformation of Sarah Goodenough

Give us a big picture of your health transformation.

Prior to going plant-based, I was in my 20's and was suffering from severe asthma. I was on steroids and albuterol, diagnosed with high blood pressure, and what was really a pivotal point for me, was when I was diagnosed with fatty liver disease. I was told by my physician that I needed to change the way that I ate. I had a friend in nursing school that told me to read The China Study by Dr. T. Colin Campbell. I read the book and immediately set forth to change the way I ate. I began watching documentaries, and reading other books about a plant based diet. After about 1 year, I lost the majority of my weight without exercise. I began to exercise and start running, something I never thought I’d accomplish. I’ve since lost 125 pounds. I ran a 5-mile race last year, and will be running a half marathon this spring. The amount of energy I have now is incredible compared to what it was before a plant-based diet. I have been of off steroids for 3 years now. I have no fatty liver disease, and I have a very healthy blood pressure.

What was the hardest part about getting healthier? And was there a unique way you addressed this?

The hardest part was starting. I committed to 3 weeks, cold turkey. I told myself that if I hated it or felt deprived, after the 3 weeks, I would go back to how I was eating. It has been 5 years, and Ive never looked back. Previously. I had tried weight watchers, a paleo meal delivery company and Advocare and they all were very restrictive and didn't provide results as dramatic or as long lasting as a whole-foods plant based lifestyle. With this lifestyle, there is no restriction or calorie counting.

Some of my plant-based staples are brown rice, black beans, salsa, corn, cilantro, and baked tofu. I throw it in a bowl, and its my go-to fast food!

What advice do you have for people who want to get healthier?

Don’t get overwhelmed. Commit to it for a pre-set amount of time. Tell yourself, if you hate it you can go back. Also, MEAL PREP!! It' so important to have the right foods on hand, ready when you’re hungry. This is imperative! Stay positive, stay focused on your goal, whether it's to lose weight, help your diabetes or just get healthier all around.
